The Good Wishes is a top-fermenting lager, bottle-fermented. Founded in 1970, this beer was offered earlier this year to the most loyal customers of our brewery (hence the name “With the good wishes of the Brasserie Dupont”).The success of this beer won him to become a beer commercial, while retaining its original name.Although popular, it was brewed in limited quantities that fans would reserve many months in advance.A coppery blond beer, with aromas of hops for the Good Wishes is a beer tasting combining soft and fruity bitterness.Our selection of yeast and a long ripening with dry-hopping gives it flavour and taste typical and complex.Of true fermentation in the bottle, which may extend very long in your cellar, results in a balanced and harmonious beer, surprising flavours and complex.

Chimay Triple, with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

De Leite Ma Mere Speciale is a Belgian IPA from artisan brewery, De Leite. Founded in the back garden of owner-brewer Luc Vermeersch, the brewery has grown from a 30L microbrewery in 1997, to over 10,000L capacity today. A clever play on words, this beer is named after the French word for bitter – ‘amere’ – and thus ‘Ma Mere Speciale’ is the perfect name for this intensely hopped IPA. The creation of Diole Ambree at Brasserie des Carrieres could be described as a happy accident. The gas flame used to fire up the mashing kettle was burning just a bit too long or the settings were too high… Regardless, the beer came out with a different colour and taste and the resulting beer was well received and it was decided the beer would be marketed alongside their existing beer.Diole Ambree is an excellent example of the expertise of the brewer, with the art of dosing perfected.Brewed with Pils and Caramel malt and three varieties of hops, it is an elegant and slightly sparkling beer with a solid frothy head. It has a fruity aroma with impressions of citrus, cinnamon and pepper with floral touches against a slightly roasted malt
background. The aroma follows through to the flavours with surprising notes of caramel which are followed with a warming, lightly bitter finish.Diole Ambree pairs excellently with goat’s cheese, stew and, of course, Belgian Diole cheese.
