Nowadays, Lambic on draught is hard to find. Only in a few pubs in and around Brussels you still can taste the curious sherry-like flavoured beer. Nevertheless, since 1880, Lambic was bottled to simplify transport but also for conservation properties. This method was the birth of Gueuze: Before the bottling of the Gueuze, a blend is made of 2/3 young Lambic and 1/3 old Lambic. The right ratio young/old is depending on the maturation degree (end attenuation) of each of them. The bottles, with the wild-spontaneous yeast flora, are refermented in the cellar (Method Champenoise).After 6 months the Gueuze obtains a golden colour and a cidery, winey palate; reminiscent, perhaps, of dry vermouth with a more complex and
natural flavour. It is often served as a happy hour drink in Brussels. It
is the traditional beer for carbonade, as well as a beautifully based
beverage with seafood or other salty meals. It is also delicious with cream sauces.

The creation of Diole Ambree at Brasserie des Carrieres could be described as a happy accident. The gas flame used to fire up the mashing kettle was burning just a bit too long or the settings were too high… Regardless, the beer came out with a different colour and taste and the resulting beer was well received and it was decided the beer would be marketed alongside their existing beer.Diole Ambree is an excellent example of the expertise of the brewer, with the art of dosing perfected.Brewed with Pils and Caramel malt and three varieties of hops, it is an elegant and slightly sparkling beer with a solid frothy head. It has a fruity aroma with impressions of citrus, cinnamon and pepper with floral touches against a slightly roasted malt
background. The aroma follows through to the flavours with surprising notes of caramel which are followed with a warming, lightly bitter finish.Diole Ambree pairs excellently with goat’s cheese, stew and, of course, Belgian Diole cheese.

Brugse Zot is a fantastic light blonde beer which is brewed in Bruges by the Halve Maan Brewery. The brewery began in 2005 when Xavier Vanneste renovated the old brewery which has a history going back to 1856, when it was owned by Xavier Vanneste’s ancestors.Once the brewery was restarted, Xavier bought Brugse Zot onto the market
and it soon gained a name for itself due to its special recipe. Brugse Zot is now the only beer being produced in Bruges town centre.Brugse Zot popularity has grown over the years due to its refreshing taste
and unique character. This character has come about due to it being brewed with four different types of malts and two types of aroma hops. The finished product is full bodied with a sweet malt character which is nicely balanced with fruit tones and is followed with a crisp and clean finish.Brugse Zot also goes through a re-fermentation that helps develop the taste while it’s in the bottle.Our recommendation is that this blonde beer is perfectly paired with most seafood.Since the brewery first started, Halve Maan has further developed their beers, including Brugse Zot Dubbel, which has been produced using Saaz hops and six specialty malts.

It has a very big head indeed – pour it gently – and a very clean palate,
beginning with a dry, lightly citric fruitiness, and finishing with a
distinctive and delicate, perfumed, hop character. Very light and fluffy in texture, giving little hint of its strength.
